Apios americana planting roots.
We include 3 sets of roots for planting with each order. Plants grow readily from roots with at least 2 tubers connected. Apios has different edible parts but the roots are one of the few staple food crops native to the southeast. This member of the legume/bean family has nice taste and texture, similar to a mix of beans and potatoes. Boil 2nd year tubers whole or slice then fry.
Apios grows as a herbaceous trailing vine and spreads through its root network. Best planted in moist sandy soils in an area it can be left alone for several years. Once it has established itself you will have roots you can dig for years to come.
